Pickled Red Onions

3/4 cup white wine vinegar
2 tbsp caster sugar
1 tbsp salt
2 tsp fennel seeds
1 tsp black peppercorns
1 large red onion, thinly sliced

Place vinegar, sugar, salt, fennel seeds, and peppercorns in a saucepan and boil over high heat. Allow to cool.

Place the sliced onion in a sterilised jar and pour over the vinegar mixture.
Store in the fridge for up to a month. Enjoy!
