Parmesan Crusted Potatoes
500g baby potatoes, washed
1 tsp salt
2 tbsp Extra Virgin Olive Oil
100g finely grated parmesan cheese, plus extra for serving
1 tsp smoked paprika
1 tsp garlic powder
1 tsp black pepper
1 tsp oregano
1/2 tsp salt
Fresh coriander, to serve
Place baby potatoes in a large pot, and fill it with enough water to cover the potatoes. Place the pot on the stove on high heat. Add 1 tsp of salt. Allow to boil for 15 minutes.
Once boiled strain the potatoes and set aside to cool. Once cooled slice the baby potatoes in half and place them in a medium-sized bowl.
Drizzle with olive oil and season with the smoked paprika, garlic powder, black pepper, salt, and oregano, toss until all the potatoes are coated well.
Preheat oven to 200C. Prepare a baking tray with baking paper.
Sprinkle a generous amount of parmesan on the baking paper. Place the halved baby potatoes cut side down on the parmesan cheese.
Place in the oven for 20 minutes, until the potatoes are golden brown.
Remove from the oven and allow the potatoes to rest for 5 minutes. this helps this cheese to harden giving this dish a delicious crunch!
Serve immediately and enjoy!
