A soft, warmly spiced loaf infused with rich carrot halwa, finished with a light, tangy crème fraîche frosting. Think gajar ka halwa meets carrot cake, but more refined, less sweet, and incredibly moist.

Ingredients
Carrot Halwa Base
300g finely grated carrots
1 tbsp butter or ghee
120ml milk
2–3 tbsp sugar (adjust to taste)
½ tsp ground cardamom
1 tbsp condensed milk (optional, for richness)
Loaf Cake
2 large eggs
80g sugar
80ml oil or melted butter
1 tsp vanilla extract
150g flour
1 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
Pinch of salt
Crème Fraîche Frosting
200g crème fraîche (cold)
120ml fresh cream (cold)
2–3 tbsp icing sugar
1 tsp vanilla
Pinch of salt
Method
1. Make the Carrot Halwa
Heat butter/ghee in a pan
Add grated carrots and cook 5–7 minutes until slightly softened
Add milk + sugar and cook until thickened and glossy
Stir in cardamom (and condensed milk if using)
Cool completely
👉 Important: it should be moist but not watery
2. Prepare the Cake Batter
Preheat oven to 170°C
Line a loaf tin
Whisk eggs + sugar until slightly pale
Add oil/butter + vanilla and mix
In another bowl, combine flour, baking powder, baking soda, cinnamon, salt
Fold dry ingredients into wet
Fold in cooled carrot halwa
👉 Batter will be thicker than normal cake — that’s correct
3. Bake
Pour into loaf tin and level
Bake 40–50 minutes
A skewer should come out mostly clean (a few moist crumbs are perfect)
Cool completely before frosting
4. Make the Crème Fraîche Frosting
Whip cream + icing sugar + vanilla to soft peaks
Gently fold in crème fraîche + pinch of salt
Mix just until smooth and thick
👉 Do not overmix — it can become runny
5. Assemble
Spread frosting generously over cooled loaf
Finish with:
Crushed pistachios or almonds
Light honey drizzle (optional but 🔥)

Moist, slightly dense crumb (like banana bread meets halwa)

Tangy, creamy frosting that balances everything

Hi Reshma, so sorry about that. I’ve just updated the ingredients. 1 tsp ground cardamom and 1 and a 1/2 cups of icing sugar.

Will it be possible for you let me know what quantity icing sugar is used in the frosting? Also, in the cake recipe, it’s mentioned 1 tsp ….. (Under cinnamon) – is it 1 tsp cardamon?
